Roasted Green Beans
(Works great with asparagus too! Or almost any vegetable!)
Approx. 1 cup of fresh green beans per person
Olive oil to drizzle
Salt
Pepper
Preheat your oven to 450 degrees. Clean and trim the green beans and place on a cookie sheet or shallow roasting pan. Drizzle with olive oil and stir to cover the beans lightly. Season with salt and pepper to taste and stir to get good coverage on all the beans. Roast in the oven for approximately 20 minutes. Stir at least once about halfway through. If your beans are very thick, you may need to cook them a little longer.
