Whole Wheat Zucchini Bread
3 eggs
1 c. vegetable oil (can substitute applesauce for all or part of this)
2 c. shredded zucchini
1 1/2 c. brown sugar, packed
2 t. vanilla
2 c. whole wheat flour
1/4 tsp. baking powder
2 t. baking soda
1 t. salt
3 t. cinnamon
1/4. c. wheat germ
Combine eggs, oil, sugar, zucchini and vanilla. In a separate bowl, combine flour, baking powder, soda, salt, wheat germ and cinnamon. Stir into wet mixture until combined. Pour into one large loaf pan or two smaller pans. Bake at 350 degrees for one hour or until toothpick comes out clean.
